1. Swell
Swell your Cask as soon as it arrives by filling it with your chosen spirit or wine through the Bung Hole using a funnel. Replace the Bung and keep the tap closed to create a seal. Wipe away any spills immediately.
Keep your Cask in service — don't allow it to dry out. Some minor seeping may occur at this stage; this is completely normal. Allow 24–48 hours for your Cask to fully swell before sampling.
2. Sample
Sample through the tap — remove the Bung first to allow flow. Note that steel taps twist from the front, while brass taps twist from the top. Smaller Casks mature spirits and wine much faster, often within days or weeks. Sample regularly and keep a simple log of tasting notes — it's the best way to track progress and dial in your perfect flavour profile.
3. Serve
Serve straight from the Barrel when sharing your results, or bottle it once it reaches your perfect profile. Use a clean, sterilised bottle and seal tightly.
Your home-matured spirit also makes a gift that's genuinely one of a kind.
4. Season
Your Cask is seasoned by every spirit or wine it matures. Each fill influences the next, building a flavour profile that is entirely your own.
